I'm having a small dinner party on Friday and since I am working like mad in between now and then, I'm spreading out my prep. I'm not sure what I'm making for dinner yet, but I've already decided what to serve for dessert. I have an interesting ice cream flavour idea I want to try, and I think it will go well with these cookies. The recipe is from Martha Stewart's Everyday Food Collectible Cookie Edition- Holiday 2006, phew!
2 cups flour
1 1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/2 cups sugar
1 1/2 sticks (12 tbsp) unsalted room temperature butter
1 large egg
1/4 cup unsulfured molasses
- Preheat your oven to 350, with rack in the centre. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup of the sugar; set aside.
- Beat butter and remaining cup of sugar until light and fluffy. Beat in egg and then molasses. Reduce speed to low; gradually add dry ingredients, beating just until a dough forms.
- using 1 level tablespoon per cookie, roll dough into balls. Then roll each ball and reserve 1/2 cup sugar to coat.
- Place balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes. Cool 1 minute on baking sheets; transfer cookies to wire racks to cool completely.
Store in an airtight container up to 4 days.
These are some good cookies! Definitly worth giving this recipe a try. Tomorrow I am going to make ice cream, and I still have to decide what to serve for dinner.
